At Prada a Tope we have been making preserves for decades with our own products from small farmers in the Bierzo region, and with a clear philosophy: to keep the recipes we learn from our ancestors.

From wood-roasted peppers to sour cherries in brandy, each preserve is made from raw material selected by the farmers, prepared at the Palacio de Canedo and maintains the flavor of its origin intact. We work with care, without haste, respecting the cycles of the land and the recipes that have passed from hand to hand.

The difference lies in not betraying the authentic.

Here you won't find shortcuts or artificial flavors. Only real ingredients, artisanal processes and a commitment to the Bierzo region that you can feel in every bottle. Our products do not travel thousands of miles nor are they mass-produced. They are grown here, picked by hand, cooked calmly and preserved as before, with care and without artifice.

Each preserve tells a story: the story of the farmer who tended the land, the story of the season that marked the harvest, the story of the team that peeled, packed and labeled the jars one by one. And, above all, the story of a land that knows how to express itself with flavor.

Because preserving is also an act of love for what we are. It is our way of saying that what is good deserves to last, that our roots have a future and that true flavors never go out of style.

What is well done does not need to be improved. It just needs to continue to be done the same way, with the same effort and love.

In Prada A Tope we elaborate our preserves in the small workshop located next to the Palacio de Canedo, with our own product or from small local farmers who share our philosophy .

Here there are no industrial production lines or automated processes: we take each step with our hands, our eyes and our hearts in what we do.

We peel the peppers one by one. We simmer the jams. We package, label and check each jar as if it were unique -because it is.

Peeled by hand, roasted with patience.

Our I.G.P. Bierzo peppers are prepared as it has always been done at home: they are roasted slowly over a live flame, peeled one by one -without submerging them in water or chemicals- and bottled by hand. This way they keep their smoky flavor, their meaty texture and that intense red color that makes you fall in love with the sight and the taste.

Chestnuts

Autumn preserved all year round

Bierzo chestnuts, of the pared variety, are one of our most beloved treasures, and we preserve them as such. With a delicate and meticulous peeling process and several cookings, packed in dense syrup, they keep their delicate texture and their sweet and moist forest flavor.
