Palacio de Canedo’s vinegar is another find for lovers of this condiment. It is made with Mencía which is aged in used oak barrels, containers in which crianza and reserva wines were aged and which transfer sophisticated aromas to the vinegars. As the Mencía wine is vinified, it is transferred from barrels following a system similar to the criadera and solera system. This standardises the acidity, taste, and aromas. Perfect for salads, vinaigrettes, pickles, and even desserts.
